We make our Mission Fig apéritif in August, infusing  more than 100 gallons of Berryessa Gap’s Zinfandel wine with California grown dried figs, fresh fig leaves from wild fig trees, and fresh Meyer lemon. The mixture macerates for several days to a week before the solids are removed.

The result is a rich and spicy beverage that can be served in multiple ways, on its own, over ice, gently warmed with a cinnamon stick, slightly chilled, with a splash or sparkling wine or water, or use it as one would vermouth, to make cocktails like these below.

Cocktail Recipes

Vieux Fermier (Big Dan) Cocktail

  • 2 oz Early Times Bourbon
  • 1 oz L’Apéro les Trois Black Mission Fig apéritif
  • ¾ oz Aperol
  • ¼ oz simple syrup
  • 2 dashes orange bitters
  1. Stain ice then strain over large ice cube & garnish with orange peel and dried fig

Cosmig Cocktail

  • ½ tsp fig jam
  • ½ oz club soda
  • 2 oz L’Apéro les Trois Mission Fig apéritif
  • 1 oz vodka
  • ½ oz cranberry juice (not cocktail)
  • ½ oz New Deal Distillery Ginger liqueur
  • ½ tsp fig jam
  • ½ oz club soda
  1. Put the jam and soda in a chilled coupe glass.
  2. Shake the fig apéritif, vodka, cranberry juice and liqueur with ice and strain into the chilled coupe containing the fig jam and club soda.
